This is our first season growing shallots and while the yield wasn’t as abundant as we had hoped, the results still have us smiling. The shallot is the onion’s smaller, gentler cousin. Despite it’s small size, it takes many days to mature. A milder, less edgy flavour is part of what the shallot has going for it. That shallots roast to perfection and can show up raw to a salad without overpowering the dish are happy facts. We plan to grow more in 2022!
